  • Yeast is the one thing I have trouble with @Obelixx . It doesn't help when the yeast I usually buy has just removed all the directions,  now is it instant or rise and knock back type????? 🥴😖🤔

    I think the dry yeast in granules in sachets can be either.   I've done both methods with success.

    This is my first ever attempt with live yeast.  The initial mix has bubbled up well but has to be left overnight before the next lot of ingredients go in.

    Sounds as if you’re making a ‘sponge’ @Obelixx ... haven’t used fresh yeast for several years but the theory is that if the sponge is left to ferment slowly overnight then you should need less yeast ... it does of course depend on the vigour of the batch of yeast and the environmental conditions.  
    I would follow the recipe closely for the first time of making at least... good luck ... look forward to hearing how it goes 👩‍🍳 🥖

    Just wanted to say thanks to @Obelixx and @Dovefromabove for the tips on Stir Up Sunday. Obviously the proof is in the pudding on 25 & 26 December, but the mix felt good and I am hopeful. They've steamed loads over the last few days and will now sit in the larder until Christmas.

    And I've checked the veggie suet and it is indeed palm oil, so I'll have to talk to my veggie relatives about whether I make a non-veggie one and an entirely separate vegan one (might as well make it vegan to accommodate an extra person) next year, or what. So thanks for the tip. I hadn't even thought to look, for some reason.

    To be honest they are just about the same,the casserole might have a bit more substance to it,that's the opinion from the wife.Another idea is to make a veggie soup its very  filling we often have it instead of a main course meat and two veg,if you are a veggie you will have to make some or by some veg stock,we always use stock from chicken carcass and other bones bought from butchers.I hope that hasn't upset you just because we are meat eaters.

  • A poolish is a wet type of pre-fermented ‘mother-dough’ aka ‘sponge’. 
    A ‘biga’ is a drier type. 

    The pre-fermentation makes for a much better-developed flavour.

    Get it out of the fridge and up to room temp in the morning before incorporating the rest of the flour etc and kneading.
