  Thanks for the advice.  Regarding the remaining green stems they're still ripening nicely each day.

  In a closed shoebox with an old banana - the ethane it releases will do the trick

  Yes, re bananas I have smaller quantities but am ripening in the fruit bowl, the bananas give off a gas that helps with ripening

  My bananas never get to that stage. I like them green
