    I always string the beans. If there’s resistance to the knife in either stringing or slicing then they go into the compost bin. It’s not as if there’s a shortage, we have 12 large portions of green bean soup in the freezer and llbs of frozen beans. It’s easy to spot beans that are likely to fail the resistance test - they are more swollen with a coarse texture to the pod.
