Pinching Out Tomatoes

My tomatoes have almost reached the height of the roof and I was wondering, is it too early to pinch out the main growing shoot? They have plenty flowers and some fruit, some are even turning red. I have even let some grow double stems.
Because I am in Spain, I could plant early for that reason, they are well advanced.

    Depends what variety you are growing. Cherry ones are usually left to ramble, as long as they are supported.  Others are allowed 4/5/6 trusses of flowers depending on height before being nipped out at the top, and can be done anytime they reach this stage.  Hope this helps.
