Can anyone tell me if I can take lots of new growth off my apple tree before fruit is ready. Its loaded with apples but you cannot see them for leaves. Its James greaves.

If it's being trained as a restricted form like a fan or espalier then you can prune long sideshoots back in late summer (Mid August)

If it's a bush or standard then you prune in winter.

Is the fruit hidden because the tree is congested with crossing branches? Was it pruned last year?

It's a Bush that is pruned every year after fruiting. I've never known it it grow so much new growth after apples have formed.
