Plant identification

Anyone know what this is - it's popped up in our mint bed. It's about 80cm tall, has long leaves all the way up the stem and has a 'twisted' bud on the top about an inch long...?

    It was salsify - had amazing spiky purple flowers and a spectacular seed head :)

    Salsify has an edible white root, considered a delicacy by some.  Closely related to schorzonera which has a black root.  Both sold as seed to cultivate as vegetables.
