Pickled radish!

Hi All, I’ve grown a glut of radish (on purpose) to make some radish pickle. I’ve sliced them and salted to draw out some moisture and the jars are sterilised. Anyone done this before? I’m looking for pickling vinegar additions thinking mustard seeds, peppercorns and chilli flakes. Any other suggestions please? 😀

    I quite like Asian flavours for my pickles. I use rice vinegar, add a some soy and lime juice. Add in some star anise and toasted sesame oil. Works for radish, carrots, onions and cucumber.

    Can add sliced garlic, ginger and coriander seeds too.

    Oooh I like the sound of that! Do you add any sugar or just the rice vinegar, soy, etc. Do you use all vinegar like for like with something like cider vinegar?.. got steamed dim sum on the brain now!😬

    To be honest I only ever make small batches so don’t have a fixed recipe. Just whatever I have in the cupboard and a bit of experimenting. I tend use sugar or honey, I’ve tried red & white wine vinegar, all work well but the rice vinegar is my fave.

    If you're feeling really adventurous try Kimchi.
    I made some last year - nearly blew my head off (I put too much garlic in), but aside from that it was really good - and very healthy

    I do fancy having a go at Kimchi but haven’t the first clue how to make it lol! Is it easy?

    It is easy.
    I bought some Chinese Leaves as the base, and added lots of radish radish, some carrot  - and way too much garlic and ginger
    It's important to salt the leaves as this draws the water out and makes them floppy.
    It all looked pretty revolting when I put it into jars to ferment and the smell was like nothing I've ever smelt before!
    But the taste is strangely delicious.
    I just googled Kimchi recipe and took it from there.

    Think I will have a go. I am partial to a pickle... this can result in cheese gorging but we all have our vices! 😀

    I couldn't taste anything for about a week after eating the first lot I made :D but it was nice
    I will make some more, but I'll go easy on the garlic, chili and ginger next time
