Raw Beetroot

    Well, you learn something new everyday, I didn't know beetroot could be eaten raw. 

    How do you prepare it for a salad, just peel and grate?

    We went to a posh restaurant for OH's birthday and the starter had beetroot prepared in several different ways, mousse, purée, pickled, a golden one raw in fine strips and a stripy one, raw, finely sliced in thin rounds, served with crab mayonnaise and scampi.
    Dordogne and Norfolk. Clay in Dordogne, sandy in Norfolk.

    I
     don't peel it,just grate it. Better to use a prosesser than by hand. Also it's more beneficial to eat raw.
