Grafting/splitting help

I'm not sure if I've posted this in the correct category.

I have this Perle von Nurnberg plant that was severely damaged during a house move last June 2018. The middle stem pictured was the main stem of the original plant, from which all the leaves fell off. I cut it back down as it was about double the size, in an attempt to nurse it back to health.

The pictures attached are what it looks like today. It has grown two little branches from the buds that was on the original stem. I don't have a picture of what it looked like when I first got it but I've attached a picture from online that looks similar.

If possible, I would like to split the plant into two plants that will grow into the same type of plant as the first picture (the way it looked before it got damaged).

Could anyone give me advice on how to do this? It's a lovely little plant, and I don't want it to die off. If I could split it into two, that would be great. It's quickly outgrowing the pot it's in, but I don't know how to restructure the plant such that it can grow like a normal Perle von Nurnberg.

Any help would be greatly appreciated.

    Cut each of the shoots off at about 7cm with a sharp knife. Let it dry for a few hours, then put in gritty compost. Water once and let it drain well. Then leave it alone. Put it in a sunny place.  The shoots are elongated due to lack of light. Normally , with plenty of light, it will form a neat rosette.
    There a videos on youtube   search "how to propagate an echeveria"
    I don't think the glass jar is a good idea, they need plenty of drainage and will rot if too wet.

    However, the top of the stem is dead. So when it grows, it grows from the side. I'm looking for it to grow upwards again. Is there a way to solve that or use the shoots to make new plants?

    I didn't think the glass jar was a great idea but the original plant came in that jar so I left it as is

    Edit: I've looked on youtube at the leaf propagation of Echeveria and have set up a little leaf 'nursery' in effect. :)
