The colours were so vibrant, I was sure some of them must be fresh or artificial and went googling. Spotted the same pic on pinterest with the name 'Winterthur' attached, and discovered that they grow and dry all the flowers themselves.
Thanks Kitty, that was great and yes, it was the tree that I first saw. Useful to hear the different flowers they used. Gonna try it next year albeit on a much smaller scale!
One of the easy-peasy annuals that I grow called 'salvia horminum' apparently air dries easily and holds its colour well. It comes in colours very similar to larkspur, purple, pink and white.
I spotted some still flowering this morning, so have cut a few stems for experiment and will report back on how it goes.
