Leeks gone to seed

My leeks have gone to seed so instead of disposing of them can I collect the seed for future use? If so how do I go about it?

There's no harm in also collecting seeds though, if you're happy to do so.
You can collect seed and use if it is ripe and dry ... but you are unlikely identical plants to the parents as they will have been cross pollinated.
