Tomato seeds storage over winter

Can you tell me how I should store my own home grown tomato seeds for planting next year. I’ve dried them on greaseproof paper, should I wait until they are dark brown before placing in a paper envelope. I’ve heard of storing seeds in the fridge, is this suitable for tomato seeds?

It's not something i've done, so if I'm wrong, I'm sure someone will correct me
I live in west central Scotland - not where that photo is...
Do bear in mind though that if you're saving seed from an F1 variety, it will not come true - i.e. it won't be the same as the parent plant
