Cut the flowered stem that is finished down to the base ... if you saw GW last night you'll have seen Monty do this as he planted one.
A small plant may only put up one flowering spike, but as the plant gets bigger year on year it'll have more and more. Removing the spent flower stem so that it doesn't try to produce seeds will allow the energy in the crown to be used for growing the plant rather than producing seeds.
