That looks very much like a variety of Centaura cyanus ... aka cornflower.
Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.

I think they are Catananche Caerulea, Cupid's Dart.

It is Catananche, I grow them seed. Shame that ones tied up, they look lovely when they flop.
