I find plants know when they are in a pot and it's not all to do with constricted root balls. I grew some Hollyhocks from seed and depending on the size of the pot the size of the once identical plants vary enormously by a factor of 3x. This is even before the plants are big enough to fill the pots.
I must admit, French Lavenders are quite temperamental, and your photos demonstrate just how unpredicatable they are, when pruned back in mid summer. Most of them don't re-flower, but the one in your border did which is not really usual. Also, make sure your soils are free draining. The soil in your pot looks very rich. Keep them in more loam based compost with plenty of grit, and then dress the top layer with gravel to keep the base dry. I think over-wintering will not be worth it. They always never look like how you bought them in the first place.
Sound advice I'd say now.
Even the one in the ground is a mess now so it obviously can't cope well with moderately cold temperatures. I'll just treat them as an annual.
