    That looks so good @Dovefromabove! Now I'm going to crave beetroot and they're about a week off harvesting  :'(  Honestly Obelixx, mandolin, spiraliser, I just want some in a fresh salad now! Ah well, cucumber again...........

    I have pickled it, but yes it goes a light pinky purple colour. And I am in agreement that the taste is nowhere near as good as normal red (or orange I quite like that) beets. I find it not as sweet and much more astringent.

    Herbaceous - just grate some raw then.
