Are they dry brown with a  hole in the middle, or wet brown and rotten and  smelly?

Brown patches in the middle are often water stress. We had the issue this year with outs. Potatoes look great on the outside but when cut they have a brown center, the center is otherwise normal, same firmness no slime etc. It's caused by dry spells and then water.

There is a virus problem which causes brown stains in tubers. It is called Spraing.
