Tall things planted against a fence usually lean away from it, looking for more light. If you screw some vine eyes into those nice chunky uprights, you'll be able to string wires or Gripple (Google it) between them and can then tie back your tall plants to it. I've grown teasels for the first time, the flowers feed pollinators and the seed heads feed birds. They are easy to grow from seed; in the first year you get rosettes of leaves, and the next year they grow six foot tall flower stems. I've got a jolly little plant that came with the house, Anthemis punctata, white daisies the size of a 2p coin, above grey-green, faintly aromatic foliage. It will spread and trail over the edges, it's evergreen and easy to propagate from cuttings. If you send me your address in a Pm, I'll send you a few.
