For that application you only need weedkiller if you have persistant and destructive weeds. Just hoe, mow or strim the weeds down for now. You could use a weed barrier or similar but nothing is growing much in this weather so it's probably not needed. If anything pops back up just hoe it off again.
If you can keep your head, while those around you are losing theirs, you may not have grasped the seriousness of the situation.
Weedkiller is a very emotive subject on here so you'll get a mixture of helpful and other replies. If you can't dig out the weeds then an application of Glyphosate is probably the right approach. It comes in many brands. Keep it away from anything you don't want to kill and cover the area after to prevent access to seeds on the wind while you wait for your slabs to be installed.
It's not worth covering the soil for only a couple of weeks.
Glyphosate (any brand) will probably take a couple of weeks to kill the existing weeds, so you could use that now, then just hoe off any new seedlings before you lay the slabs. Or go for the cheap but harder work option of digging out the weeds.
There are also things like Pathclear which have an extra ingredient that they claim stops germination of new weeds, but if you're going to have soil beds in your greenhouse that wouldn't be good.
