When to harvest black and red currants?

I seem to have a few black currant bushes and one redcurrant (or the blackcurrant produces more fruit? Can't tell at the moment). I don't know what variety they are, so is there a way to know when they are ready? I haven't touched them since I moved in four years ago and they look pretty big and old. When and how should I be pruning them? Will the fruit still be OK to eat?

    I grow Ben Conan and Ben Sarek blackcurrants here in Essex and I harvested all mine over the last few days.
