Deadheading sweet peas im

I’m growing sweet peas for the first time and loving it so far. Looking for very specific advice on how to dead-head them. Most of the advice seems to be about picking them for the house but I want the colour in my garden. Should I just nip the tops off with my fingers or cut off the whole stem? Do I use my fingers or secateurs? Also despite me checking them every night there still seem to be pods emerging-in this weather can they grow a small pod in a day?! Thanks in advance for your help!

Keep picking the flowers before the pods form and the plant will keep producing flowers.
I snip the dead head off at the base of the flower stem.
