I have a new one ("Hadspen Abundance") planted and it has a single long stem/stalk with two pointy buds -- should I cut the stem all the way back? I just want it to establish before flowering.
You can if you want to. Cut it right back to the base. I think if it were me, the plant has already produced the buds, so I'd let it flower and cut the stem back soon as flowering is over. They're very tough plants and creep along just under the soil. I'm forever pulling bits up where they pop up in unexpected places
