The foliage will wither and disappear naturally over the summer. You can remove it when it turns yellowish if you find it spoils your display.

Cut the foliage back and you will get fresh leaves.

Do you mean the annuals, that grow like trees in a season, bluey silver leaves,stems, I leave them, they look quite nice even after flowering.

Or, you could leave some heads to form seed pods! The germinate nicely
