Vine pruning

I was puzzled by Monty's advice in Friday (18th) about pruning vines now in order to regulate the number of bunches of grapes for better fruit. He had advised previously that a vine will 'bleed out' if pruned when not dormant. How do these two tips reconcile? There must be an explanation but I am not sure what it is.

    I believe that the bleeding out does not always happen on grape vines. Generally, the main 'big prune' is done in the dormant months, which makes sense since the biggest cuts are done then, and the risk is higher especially if that is done when the vine wakes up and starts growing.

    The 'training' which tends to be cutting into smaller branches to control where the branches grow and pinching off have to be done when it's growing to guide them especially when wall trained.
