What could be eating my tete a tete heads?

    Slugs. Remove any stray dry leaves around them. The slugs will be hiding in them.  Snails also like holes in dry stone walls to hide in.  A few slug pubs (shallow dishes of beer) will attract a lot of slugs and reduce the egg laying they are about to do.

    If I didn't know you were a vegetarian, I would suggest venison casserole. :)
