I don't think self sufficiency exists in any western country, but your grounds sound amazing and you'll be able to create some wonderful areas I'm sure. Not at all jealous!
Not all meat breed chickens are the hybridised monsters you speak of ......... if you're interested in poultry keeping have a look at the traditional dual purpose breeds .... Rhode Island Reds and Plymouth Rocks are just two breeds that produce good eggs and are also good meat breeds ... they're also hardy and able to cope with low temperatures.
We kept and bred quite a few traditional breeds of free-range poultry on our smallholding ... great characters and very good company.
Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.
I know that all meatbreeds aren't monsters, I didn't write that, but chickens in the industry grow to fast. My chickens take 6 months to grow, the chicken from the supermarket takes little over a month.
I have hens as I wrote, Swedish Flower Hen, Danish hen and their offspring. They are hardy to this climate, so the world don't end if there is a power shortage. '
