Elixir heater mat and thermostat set up

I have a elixir heater mat and thermostat. The thermostat sensor - do I bury the the sensor under the soil or leave it in the open for the ambiant temp.I am using seed trays on the mat.

I bury mine so it's just under the surface of the soil in a seed tray that's toward the edge of the mat. Ambient temperatures can fluctuate quite quickly.
