When I was a very little girl, (and that’s many years ago) my mum would never let me lick the cake mixture bowl, saying that I could get tummy ache from the raw flour. Probably wasnt cleaned with bleach like it is now.
Actually, Nanny Beach, the "health experts" said in October (30 years after the salmonella-in-eggs scare) that pregnant women and the elderly can now safely eat raw eggs. There's been a vaccination programme for chickens which has been successful.
I never stopped eating raw eggs - but I've only ever bought free range ones. Couldn't give up home-made chocolate mousse or pavlova...
Since 2019 I've lived in east Clare, in the west of Ireland.
Yes, Obelixx, I'd call them cooked in meringue... but I remember being told at the time of the salmonella scare that they needed to be cooked at a higher temperature to kill the bugs, hence hard-boiled eggs were ok, soft-boiled ones not; ordinary cake ok, meringue not... etc. Agree totally about hen welfare, the original reason why I bought free range eggs.

TBH, I never worried about salmonella in eggs because I've bought the well brought up kind for years and free range chucks to eat too. If all goes to plan tomorrow we'll be plugging in the Rangemaster and I can do a pav at Xmas. The oven in this kitchen when we moved in was hopeless and the new oven has an automatic cleaning cycle so no leaving a pav to cool slowly and go all unnecessary in the middle. Sometimes new technology is not an advance.

I agree Liri except for liking my egg whites cooked for a pav! Only ever by organic free range eggs cos I care about hen welfare.
