I clean all traces of soil from the tubers , dry out thoroughly and keep them in a cool room or frost free shed during the winter months , obviously after cutting off all foliage . Re-pot in the Spring and water as usual .
(Helps if you've a greenhouse to speed things up a bit ) !
I usually leave mine in and mulch, but this year I think they’ve been in long enough to need separating, dug up a huge clump as it didn’t flower too well this year, seems to be all joined together, so needs sorting, but another one just fell into three separate clumps.
I always wrap in newspaper after drying them off.

Lida - it depends where you are in the country as to whether your dahlias can be left in the ground or not. The colder it is and the more wet it is, means that they will have a lesser chance of survival. And don't break the tubers up individually - they are meant to grow like that in a clump - you just replant the whole clump together. You only need to divide the clumps if they are HUGE - and by that I mean if the clumps are many years old.

There are so many roots on each plant and I wonder should I divide them now or in spring?
I leave mine in the ground, have done for years now. Just give them a heavy mulch of manure.
haha,,my back still hurts from digging...so I planted lots of bulbs in the empty spaces.
I lift mine as often you can divide the tubers in spring and double your plants
