I've got some lovely leaf mould which I understand can be used to mulch now, but is it also OK to dig some in or is there a reason not to?
I can't see a reason not to if you have leaf mould. If they're only one year old, it's great to put on the top of the soil or used as a soil improver. You can just dig it in or leave on as a top layer.
