Acanthus Mollis - Mould

The Acanthus Mollis I have in my garden Is suffering with leaf mould. The two years I have lived in my house I have just left it to die back which looks messy when all the leaves eventually go limp and soggy. Would it be ok if I cut it back to the ground now?
I cut off the tall flowers last weekend to stop them dropping seeds and now I’m left with mouldy leaves it makes sense in my head to remove them, if it won’t do any harm.

My acanthus molllis is always mouldy at various times of the year. When the new leaves grow they are lovely, then they get mouldy, I remove them, then they grow again, then they go mouldy, etc.
In the brief period when they are not mouldy they are eaten by the slugs.
Every year I decide to remove those hopeless plants, but I relent... and the infernal cycle continues.
Cut as close to the ground as possible ; they'll probably even commence regrowth before the winter sets in !
