When to cut my new hedge

I planted a double row hornbeam hedge, 100 plus plants 3 years ago, now almost 7 feet tall, (I've replaced a few which didn't take with some bare root plants this spring so 3/4 feet tall).
I've clipped the tops to control the height, but have yet to cut the two sides.
When should I do this?
And how often/when each year?
Intend to buy an electric hedge trimmer in next few days

Hi John, when you bought your original plants may I ask what height they were? Seven feet in three years is brilliant and as I'm about to plant two hedges I'd be interested to know where best to start in terms of height.
