French Beans, Drying

Grown these for the first time (Cobra and Cosse Violette) and decided to leave lots for drying.  I don't much mind the yellowing, tangled messy rows of plants but wondered if the pods can be removed from the plants for drying out?

The pods are huge, still very green as I suppose one would expect at this time of year but I'm wondering if they tend to go mouldy if there is prolonged wet weather.
