Planning for pruning grafted apple branches

I'm interested in grafting different varieties of apple onto existing trees, but how should I plan for future pruning? I don't want to accidentally prune off too much of the grafted parts.

Mark the graft with red wax or similar , so that you know where the graft is. I would also label each graft so that you know the variety.
