Thinned plum tree - now what?

I visited a friend's garden today and noticed that their 4yr old plum trees were bending under the weight of the fruit. I've dutifully thinned it out, but what do I do with the hard green fruit? It seems like a waste to bin it! Any thoughts? There must be about 4lbs of plums I've taken off. Thanks for your help!

I found this Middle Eastern recipe the other day ... I've not tried it ... I don't have a plum tree ... but next year I may beg some sour plums from a friend
