Pruning bare root fruit trees

Hi

I planted some bare root fruit trees in France the winter before last. 

Half were stolen not long after, so I just left the others and forgot about them since I haven't spent much time there. 

The ones left are the apple and pears. How should I prune them at this point?

I'm sure I read that after planting you can cut them right down to encourage new lower growth. Or should they just need a lighter prune?
