It sounds as if you have a Lacecap Hydrangea ... they look quite different to the mophead types. Much more delicate and elegant ...

The middles don't open fully, it's something to do with the fertilisation. The outside flowers are different to the inside ones, can't remember off hand exactly which is which but I saw a programme on tv about the reproduction of the lace cap.
