Planting beetroot offcuts after greens sprouting

Hi, I recently tried to grow some beet greens from some offcuts and they have started to grow new shoots.  I just cut the top cm off the beetroot and placed them in some water in a container.  But now I was wondering what my next step is?  Do I plant the offcuts covering the top of the beet and allow the greens to grow this way (I'm not trying to grow more beetroots, just the greens).

    I find that if you sow beet seed thinly  in a deep tray, you can just harvest the leaves with a pair of scissors, and they are more tender.  You can also grow as microgreens, there is a special tray for this sold in the garden centres.

    As fb suggests sow and grow them as salad leaves for the best, but it's worth experimenting with what you've got. No point in putting them in compost/soil - there are no roots. I'd say keep them in about 1" of water, change the water daily and see what happens.
