I am interested in growing some more of the first one as it has much more flowers and the mix of colours are very lovely. So what variety of Dianthus should I look for (I am sure they are not Dianthus barbatus - aka Sweet williams)?

There do come in all sizes but will grow taller where there is less light. Look for Dianthus plumarius or Pinks.
If you want small types, also look at dianthus deltoides (maiden pinks) which make an excellent groundcover.
