sambucus nigra

We have a beautiful sambucus nigra but I have no idea whether or not they can be used for culinary purposes.  I would very much appreciate some information

I didn't think they were any different to common elderberries? I make elderberry vinegar as a rule, and occasionally some elderberry jelly (if the raspberries or blackberries don't do well one year). Elderberry syrup is supposed to be very good for coughs, I believe.

I've made both elderflower and elderberry wine in the past .... if you're a good and careful winemaker and the gods are smiling on you both are delicious.

You can also use the berries to make a liqueur in a similar way to sloe gin.

I also use elderflowers in fritters and when cooking gooseberries.
